Ingredients for the cake:

- 4 eggs

- 3/4 cup sugar

- 1/2 cup all-purpose flour

- a pinch of salt


Ingredients for the filling:

- 8 ounces mascarpone cheese

- 1/2 cup powdered sugar

- 1 cup heavy cream

- 1 teaspoon vanilla extract

- 1/4 cup brewed espresso or strong coffee, cooled

- 2 tablespoons cocoa powder, for dusting


Instructions:

1. Preheat your oven to 350°F (175°C). Grease and line a 10x15-inch baking pan with parchment paper.

2. In a large bowl, beat the eggs and sugar together until light and fluffy. Add in the vanilla extract and mix well.

3. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the egg mixture, folding gently until just combined.

4. Pour the batter into the prepared baking pan and spread it evenly. Bake for 12-15 minutes or until the cake springs back when lightly touched.

5. While the cake is baking, prepare a clean kitchen towel by dusting it with cocoa powder.
