Ingredients:

- 1 pumpkin roll pastry sheet

- 3 large eggs

- 1 cup granulated sugar

- 2/3 cup canned pumpkin puree

- 1 teaspoon lemon juice

- 3/4 cup all-purpose flour

- 1 teaspoon baking powder

- 2 teaspoons ground cinnamon

- 1/2 teaspoon ground nutmeg

- 1/2 teaspoon salt

- Powdered sugar for dusting


Cream Cheese Filling:

- 8 ounces cream cheese, softened

- 1 cup powdered sugar

- 6 tablespoons unsalted butter, softened

- 1 teaspoon vanilla extract


Instructions:

1. Preheat your oven to 375°F (190°C). Grease and line a 10x15-inch jelly roll pan with parchment paper.

2. In a large mixing bowl, beat the eggs and granulated sugar together until well combined and slightly thickened.

3. Add the canned pumpkin puree and lemon juice to the egg mixture, and mix until smooth.
